Chicken biryani is that kind of recipe, to which no one can deny to have. Today I am going to make restaurant style chicken biryani in easy steps.
Required Ingredients for chicken biryani-
- Chicken with bones = 750 gm
- Basmati rice = 1 kg, soaked for 2 hours
- Onion = 2, large size, fried golden brown
- Tomato = 2, large size, finely chopped
- Red chili powder = 1 tsp
- Salt = as per taste
- Green chilies = 6
- Cloves = 5 to 6
- Nutmeg or javitri = 1/2 tsp
- Cumin seeds = 1 tsp
- Cinnamon stick = 3 sticks
- Bay leaf = 2
- Black pepper 7 to 8
- Green cardamom = 5
- Black cardamom = 1
- Ginger and garlic paste = 2 tbsp
- Curd = 150 gm
- Oil = 75 ml
- Saffron = 1/2 tsp, soaked
- Biryani masala powder = 1 tbsp
- Mint leaves = 1.5 cup
- Coriander leaves = 1 cup
Method of making-
For marinating, take a bowl add washed chicken in it. Add ginger garlic paste, curd, biryani masala, red chili powder and salt. Mix all the things well and keep it aside for 30 minutes.
Making of biryani-
Take a pan, pour oil in it and heat it up. Now add cumin seeds, cloves, cinnamon stick, nutmeg, green cardamom, black cardamom, black pepper and bay leaf. let the whole spices crackle for few seconds.
Now in whole spices, add some fried onion in it and also add marinated chicken in a pan. Fry chicken well by stirring it for 5 to 6 minutes.
Now add green chilies in it and mix it well.
Add chopped tomatoes and mix it well. Cook it until oil gets separated.
When oil gets separated, turn the flame off.
Take another pan, pour water in it for boiling rice. Add cumin seeds, cloves and green cardamom in water and also add 1 tbsp of oil in water. Let the water boil and then add soaked water in it.
Boil rice about 75% and then strain the excess water.
Process of layering-
Take a heavy base pan, add half rice in it and spread rice in a pan. Now add half mint and coriander leaves, soaked saffron. Also add fried onion and then add half layer of chicken on rice.
Make one another layer of rice and do the same process.
Cover the lid and turn the flame low. Let it cook for 10 minutes on a low flame.
After 10 minutes, open the lid and dish it out in a serving dish.
Chicken biryani is ready to serve, garnish it with fried onion.
Serve it with raita or chutney.
