Zunka Recipe Zunka or jhunka is a vegetarian traditional Indian dish which is mostly prepared in Maharashtra, Goa and North Karnataka. It is basically a chickpea flour which is cooked with the basic spices or ingredients such as onion, green chilies and other spices like salt, red chili powder, turmeric powder. The gram flour is cooked in these spices and then by adding a dash of water it make it a semi liquid form of consistency. This is a delicious recipe goes well with paratha. So let’s know how to make it.
Necessary Ingredients Required For Zunka Recipe
- Gram flour = 1/2 cup
- Oil = 4 tbsp
- Onion = 1 large size, finely chopped
- Green chili = 2, crushed
- Onion = 4 cloves, finely chopped
- Ginger = 1/2 tsp, grated
- Cumin seeds = 1/2 tsp
- Mustard seeds = 1/2 tsp
- Asafoetida = a pinch
- Red chili powder = 1 tsp
- Turmeric powder = 1/2 tsp
- Garam masala powder = 1/2 tsp
- Salt = as per taste
Instructions For Making It
Firstly in a wok or a pan, add oil and heat it up.
Then add cumin seeds, mustard seeds and asafoetida. Let them splutter for a while.
Now add garlic, ginger and green chilies and saute for a minute.
Further add chopped onion in it and cook it till it turns translucent or pinkish in color. Do not overcook the onion.
Then add all the dry spices like red chili powder, turmeric powder, garam masala powder and salt. Mix all the ingredients well without burning the spices.
Furthermore, turn the flame on medium and add gram flour in it. Saute gram flour till an aromatic and nutty aroma comes from the mixture.
Saute the mixture till it turns golden and becomes dry.
Add just a splash of water and mix well. Make sure you do not have to add a large amount of water, just a splash and again mix it well.
Finally, add a tsp of oil in it and mix it to give it extra shine.
Finally, add chopped coriander and serve. Your delicious zunka dish is now ready. Serve it hot with chapati or paratha and enjoy.
