Vegetable Korma Recipe Hey readers!!! Welcome back to the zayka recipe’s kitchen. Today I am going to share delicious recipe of veg korma which is vegetable korma. A healthy and tasty korma which is perfect for the vegetarians and for the lunch too. I am using vegetables like potato, beans, carrot and peas. If you want to add more vegetables like capsicum, cauliflower and others then you can add them in this delicious korma. Let’s know how to make it.
Necessary Ingredients Required for Vegetable Korma
- Carrot = 1/2 cup, chopped
- Potato = 1/2 cup, chopped
- Peas = 1/2 cup, chopped
- Beans = 1/2 cup, chopped
- Bay leaf = 2
- Cinnamon stick = 1
- Green cardamom pods = 2
- Onion = 1, finely chopped
- Cloves = 3
- Salt = as per taste
- Oil = 2 tbsp
For Gravy Paste
- Coconut = 1 cup, grated
- Cashews = 1 tbsp
- Poppy seeds = 1 tbsp
- Green chilies = 2
- Ginger = 1 inch piece
- Garlic = 4 cloves
- Black peppercorns = 4 to 6
- Curd = 2 tbsp
Instructions For Making It
In a grinder jar, add coconut, cashews, poppy seeds, green chilies, black peppercorns, ginger, garlic and curd.
Grind all the things and make a smooth paste from it. Keep this paste aside.
Take a pan, add oil in it and heat it up.
After heating of oil, add green cardamom pods, bay leaf, cinnamon stick and cloves. Saute these spices for few seconds.
Now add chopped onions in it and saute till onions becomes pink and soft.
Then add vegetables and salt. Saute all the vegetables for 2 minutes by continuously stirring it.
Further add 2 cups of water and cover the lid. Cook the vegetables are 80% cooked, cook for 10 minutes.
Ones the vegetables are cooked well, add the prepared masala paste in it and mix it with all the vegetables.
Stir fry the vegetables with paste for 2 minutes and then add 1/2 cop of water.
Finally, add some chopped green coriander and cover it, simmer the flame and let it cook for 5 to 8 minutes.
Your delicious veg korma is now done. Serve it hot with steamed rice or chapati or naan.
