Idli recipe- Idli are a type of savory rice cake which is mainly originated from the Indian subcontinent, popularly as breakfast foods in southern India and northern Sri Lanka. The cakes/idli made by steaming a batter consisting of fermenting black lentils and rice and also can be made with semolina. But the taste of lentils and rice idli are tastier than semolina idli.

Hey foodies!!! Welcome back to the zayka recipe’s kitchen. Today we are going to make idli by using lentils and rice. The lentils which is used in the idli is black gram dehusked lentils and rice. For making idli, rice and lentils are soaked overnight and then grinded into a fine consistency and then fermenting for 24 hours. So without wasting anytime, let’s start making this delicious recipe of idli.
Necessary ingredients required for making rice and lentils idli recipe-
- Rice = 3 cups
- Black gram lentil split and dehusked (urad ki dhuli dal) = 1 cup
- Baking soda = ½ teaspoon
- Oil = for greasing the idli stand
- Salt = as per your taste
Procedure to make rice and lentils idli
For making rice and lentils idli, clean and picked out all the unnecessary particles from rice and lentils.
Now wash them separately and soaked them overnight.
In the next morning, strain the excess water from both the things and grind both the things separately. You have to grind lentils into a fine paste and rice into a thick paste.
After grinding both the things, mix the rice and lentils together and beat them for 2 to 3 times. Now add salt and baking soda into the rice and lentils batter and cover it.
If you are making idli in the summer season, then it will take 24 hours to ferment it and if you make it in the winter season, then it will take 48 hours for fermenting.
After fermentation, the batter of rice and idli will double in the quantity.
Now it is ready to make idli. Mix it well for one more time after fermentation.
For making idli, if you have an idli vessels then make idli into it. But if you do not have that stand then you can also make idli into pressure cooker.
For making idli in pressure cooker, pour ½ liter water into it and let it boil.
Now put stand in the pressure cooker by greasing some oil in the mould.
After greasing the mould, put necessary batter into all the moulds of idli stand and cover the lid of pressure cooker. Remove the whistle of pressure cooker.
Now turn high the flame and let it cook for 10 minutes.
After 10 minutes, switch off the falme and let the pressure cooker cool.
Now open the lid of the pressure cooker and serve it into a plate.
Your idli are ready to serve.
Serve it with the sambhar or with coconut chutney.
