Shikampuri Kebab Recipe | Ramzan Special Shikampuri Kebab

Shikampuri Kebab Recipe This is a Hyderabadi (India) side dish or a starter which enhances your taste and makes your dinner more tastier than the normal. They are made both with meat or poultry and vegetables as well. Here I am making these kebabs with vegetables and they are totally different from shami kebab or veg kebab. These kebabs are juicy, soft and delicious in taste. So let’s know how to make it.

Necessary Ingredients Required Fir Shikampuri Kebab

  • Potato = 3/4 cup, boiled, peeled and mashed
  • Mixed vegetables = carrot, cauliflower, beans, chopped and half boiled
  • Onion = 1 cup, chopped in slice
  • Bread crumbs = 1/2 cup
  • Black pepper powder = 1/2 tsp
  • Mawa/khoya/khoa = 1/4 cup
  • Cottage cheese (paneer) = 1/4 cup, grated
  • Ginger paste = 1 tsp
  • Green chili paste = 1/2 tsp
  • Red chili powder = 1 tsp
  • Turmeric powder = 1/4 tsp
  • Cumin seeds = 1 tsp
  • Salt = as per taste
  • Mint leaves = 2 tbsp, chopped
  • Coriander = 2 tbsp, finely chopped
  • Green cardamom powder = 1/2 tsp
  • Ghee = 1 tbsp
  • Oil = 1 tsp

Instructions For Making It

Step 1

In a pan, add oil and heat it up. Then add onions in it and saute till they slightly turn golden in color. Remove onion from the pan and keep them aside.

Step 2

Further add boiled potatoes and mix vegetables in it and mix well. Make sure they are mash and mixed. Add this mixture to the grinder jar and grind it granulated. Keep this mixture aside.

Step 3

Take another pan, add ghee in it and then add cumin seeds in it and let them splutter for a while.

Step 4

Then add ginger and green chili paste in it and saute till raw smell disappears.

Step 5

Also add all the veggies and potato mixture to the pan and mix well.

Step 6

Now add red chili powder, turmeric powder and salt. Cook for 2 to 4 minutes on a low flame. Turn the flame off and keep this mixture aside for cooling.

Step 7

Further add chopped mint leaves, coriander leaves, grated paneer, fried onion, mawa and bread crumbs. Combine everything well and even.

Step 8

Take a small portion from the mixture, make a round ball of it and flatten it to shape it like a kebab. Make all the kebab with the similar process.

Step 9

Take a nonstick pan, grease some oil and add the prepared kebab. Cook them on a medium to low flame till thy turn golden in color. Fry them from both the sides.

Finally, your delicious shikampuri kebab are now ready to serve. Serve them hot with paratha or sauces and enjoy.
