Sambhar Recipe | South Indian Sambhar Recipe

In today’s section I am going to share with you a very traditional and interesting recipe that is nothing but a very famous south Indian dish that is sambhar. Sambhar is a lentil based vegetable stew or chowder or we can also say soup, cooked with dal and tamarind broth. It is a very popular south Indian and Sri  Lankan cuisines. This is very healthy and nutritious dish, served with rice or mostly in dosa or idli. So lets start the recipe of sambhar in our today’s kitchen.

Necessary Ingredients We Required

To make sambhar powder

  • Urad dal = 1 tbsp
  • Chana dal =1 tbsp
  • Coriander seeds = 2 tbsp
  • Cumin seeds = 1 tbsp
  • Fenugreek seeds = 1/4 tsp
  • Red chilies = 10 to 12 nos.
  • Black pepper = 1 tsp
  • Desiccated coconut = 1/4 cup

To make sambhar

  • Urad dal =  1 tsp
  • Toor dal = 1/2 cup
  • Chana dal =1 tsp
  • Mustard seeds = 1/2 tsp
  • Red chilies = 2 nos.
  • Oil = 2 tbsp
  • Tomatoes = 3 nos, finely chopped
  • Brinjal = 6 nos, roughly chopped
  • Salt = to taste
  • Turmeric powder = 1/4 tsp
  • Tamarind puree = 1 cup
  • Sambhar powder = 2 tbsp
  • Water = 3 cups
  • Drumstick = 1 nos
  • Shallots = 20 nos.
  • Coriander leaves = 2 tbsp

Methods Of Making Sambhar

Step 1

In a bowl, add toor dal and wash it gently.

Step 2

Put dal and 1/3 tsp of turmeric powder in pressure cooker along with water and boil it for about 3 whistles.

Step 2

In a pan dry roast all the sambhar powder ingredients till you get nice aroma in it.

Step 3

Cool down the ingredients and  grind it into course powder.

Step 4

Heat a deep pan or kadai with some oil and add 1 tsp urad dal, chana dal, mustard seeds and let it splutter.

Step 4

Now add dry red chilies, asafoetida powder and few curry leaves. Roast them.

Step 5

Add shallots and saute them.

Step 6

Add tomatoes and saute them till they get soft.

Step 7

Now add brinjal, drumsticks and saute them well. Along it add salt and turmeric powder, saute them well.

Step 8

Add 1 cup of tamarind puree and cook it for 3 minutes.

Step 9

Add water  and let it boil for 10 minutes.

Step 10

Once the mixture gets thicken add cooked dal along with 2 cups of water and mix well.

Step 11

Next add 2 tbsp of sambhar masala and bring it to a boil for 10 minutes.

Step 12

Finally add coriander leaves and turn off the flame.

Your Sambhar is now done. Serve it hot with rice, dosa or idli.
