Ingredients required for making royal white chicken-
- Chicken = 1 kilogram
- Cloves = 10 to 12
- Black pepper = 10 to 12
- Black cardamom = 1
- Green cardamom = 3 to 4
- Mace spice (javitri) = 1 to 2
- Cinnamon stick = 2 to 3
- Dry fenugreek leaves = 1 teaspoon
- White pepper = 1 teaspoon
- Curd = 100 gram
- Fresh cream = 100 gram
- Cashew nuts = 10 to 12
- Almonds = 10 to 12
- Onion = 2 (medium size)
- Green chili = 10 to 12 (slit)
- Ginger and garlic paste = 2 tablespoon
- Salt = as per taste
- Oil = as required
Paste for gravy-
- Make paste of onions which are mentioned in the ingredients by grinding them into a mixer.
- Soak the almonds for 20 minutes and remove its peel. Now take a jar and add cashew, almonds, white pepper and 3 tablespoon of milk. Grind them together to make fine paste.
How to prepare royal white chicken-
Heat the oil in a deep pan and add cloves, black pepper, black cardamom, green cardamom, mace spice and cinnamon stick.
Fry all the ground spices until they start crackling and change their color.
After frying up of all the ground spices add onion paste into the pan and fry it until it changes its color into pink.
Now add ginger garlic paste with the onion paste and cook it for 5 minutes.
After 5 minutes, add chicken in the pan and fry it on a medium flame for 12 to 15 minutes.
Now add curd and salt in the chicken and let it cook until the chicken is tendered.
After sometime, check whether chicken become tendered or not. If it breaks easily then add cashews, almonds, white pepper paste in the chicken. Mix them together and let it cook for 20 minutes.
Add dry fenugreek leaves and slit green chilies when chicken starts leaving oil from the sides.
Cook for 5 minutes on the low flame.
Now add fresh cream and cook for 2 minutes more.
Your chicken is ready to eat.
Garnish it with some fresh cream and a leaf of cilantro.
Serve this delicious royal chicken recipe with butter naan or rice.
