Necessary Ingredients Required For Paneer Changezi

For Marination

  • Cottage cheese (paneer) = 300 gm
  • Ginger and garlic paste = 1 tsp
  • Red chili powder = 1/4 tsp
  • Turmeric powder = 1/8 tsp
  • Curd = 2 tbsp
  • Oil = 2 tsp
  • Gram flour = 2 tbsp

Ingredients For Gravy

  • Onion = 3 medium size, finely chopped
  • Tomato = 3 medium size
  • Curd = 1/4 cup
  • Coriander powder = 4 tsp
  • Red chili powder = 1/2 tsp
  • Turmeric powder = 1/2 tsp
  • Salt =as per taste
  • Roasted cumin powder = 4 tsp
  • Kashmiri red chili powder = 1 tsp
  • Pure ghee = 1 tbsp
  • Oil = 1 tbsp
  • Garam masala powder = 1 tsp
  • Kasuri methhi = 1 tsp
  • Nutmeg and mace powder = a pinch or grated

Other Ingredients

  • Whole dry red chilies = 2
  • Green cardamom = 4
  • Cloves = 4 to 5
  • Black peppercorns = 5
  • Black cardamom = 1
  • Bay leaf = 1

Instructions For Making It

Step 1

Firstly we are going to marinate paneer, cut paneer into large pieces then take a mixing bowl and add curd, gram flour, ginger and garlic paste, oil, turmeric powder and red chili powder. Mix all the ingredients well and make a paste of it. Now add paneer in it and coat them well with the marination. Keep it aside for marinating.

Step 2

Finely chop the onions as fine as possible and then grate the tomatoes (by grating tomatoes, its skin will automatically gets separate). Also grate tomatoes will give a nice crunch to the gravy.

Step 3

In a pan, add 2 tbsp of oil and heat it up. Then add marinated paneer in it and fry them lightly only till marination sticks on it. Fry them from all the sides and then keep them aside in a plate.

Step 4

Take a separate pan and heat it up on a medium flame. Then add all the whole spices in it and dry roast them till a beautiful aroma comes from it.

Step 5

When spices turns aromatic, add ghee and oil in it and then add chopped onion in it. Saute onion till they turn golden brown in color.

Step 6

You have to cook onion till 80% and then add ginger and garlic paste in it.

Step 7

Saute them till raw smell disappears. Now add grated tomatoes in it and also add red chili powder, turmeric powder, coriander powder, roasted cumin powder and then cook these spices well.

Step 8

Further add whisked curd in it and cook till all water disappears from it.

Step 9

Once all spices gets cooked well, add paneer and its marination masala in it and mix them well. Also cook them on a low flame by adding garam masala powder and kasuri methi in it. Mix well and cover the lid, simmer the flame and cook for 2 minutes.

Finally, your delicious paneer changezi is now ready to serve. Serve it hot with naan or chapati or puri paratha and enjoy.
