Okra Curd Curry Recipe | Vendakkai Mor Kuzhambu

Okra Curd Curry Recipe This is an authentic recipe of South India which is really delicious and unique in taste. This dish has fried and crispy okra (ladyfinger) which is then pour to the thick curd curry and them tempering is prepared to this dish. It goes perfect with the hot steamed rice and this recipe is also known as vendakkai mor kuzhambu. So let’s know how to make it.

Necessary Ingredients Required For Okra Curd Curry

  • Okra (ladyfinger/bhindi) = 10
  • Coconut oil = 3 tbsp
  • Salt = as per taste

For Masala Paste

  • Fenugreek seeds = 2 tsp
  • Split toor dal (arhar dal) = 2 tbsp
  • Turmeric powder = 1/8 tsp
  • Cumin seeds = 1 tsp
  • Fresh coconut = 2 tbsp, grated
  • Green chilies = 2, finely chopped
  • Dry red chilies = 2
  • Coriander leaves = 1 tbsp, chopped
  • Ginger = 1 inch piece, chopped

For Gravy or Curd Mix

  • Curd = 1 cup
  • Water = 1/2 cup
  • Salt = as per taste

For Tempering

  • Ghee = 1 tsp
  • Mustard seeds = 1/2 tsp
  • Asafoetida = a pinch
  • Dry red chilies = 2

Instructions For Making It

Step 1

In a bowl add lukewarm water and add toor dal, turmeric powder in it. Soak it for 30 minutes.

Step 2

In a wok, add a tsp of oil and heat it up. Add fenugreek seeds, green chilies, ginger and dry red chilies. Saute till aromatic. After roasting, transfer to a plate and let it cool.

Step 3

After 30 minutes, transfer the soaked and drain dal to the blender jar and also add the roasted spices, coriander leaves, cumin seeds and coconut along with dal and blend into a fine paste.

Step 4

In same pan, add coconut oil and heat it up. Then add okra in it and fry till its outer layer turns into golden in color. You can also sprinkle some salt on it.

Step 5

In a separate pan, add the prepared paste, curd and water and put it on a flame. Keep stirring it on a medium flame to make it lumps free. Make sure that it must not be burn because it needs much care while cooking.

Step 6

Cook it until the gravy turns thicken in consistency and oil separates from it.

Step 7

Further add, fried okra in it, give it a nice stir and turn the flame off.

Step 8

Take a tempering pan and add oil in it, heat it up.

Step 9

Now add mustard seeds, asafoetida, dry red chilies and saute for few seconds. Turn the flame off and pour this tempering to the prepared gravy.

Finally, serve this okra curd curry with steamed rice and enjoy.
