Mishti doi is a sweet yogurt which is very popular in Bengal. The Bengali people prefer it as a dessert after their meal and the taste of this mishti doi is different from the ordinary curd with sugar. So let’s know how to make it at home.
Required ingredients for mishti doi-
- Full cream milk = 1 ltr
- Green cardamom powder = 1/4 tsp
- Curd or yogurt = 4 tbsp
- Sugar = 100 gm
Method of making-
Take a heavy base pan, pour milk in it and put it on a flame.
Now let the milk boil. After a boil, turn the flame low and keep boiling it. Give it a stir in between so that it cannot burn.
Boil the milk until it remains half or 50% from its original volume.
Now turn the flame off and add half sugar and green cardamom powder in a milk. Mix it well.
Now take a pan, pour sugar in it and let it melt on a flame. Continuously stir it until it melts.
Sugar is caramelised now.
Add this caramelised sugar in milk and mix it well.
Take an earthen pot or mitti ka kulhad, Pour the milk in earthen pot and add yogurt in it and mix it well.
Cover the pot properly and then keep it at a warm place. In freezing misthi doi, it will take 12 hours.
Do not put it in a refrigerator.
After 12 hours, curd is freezed.
Mishti doi is ready. Garnish it with some chopped almonds, cashews and pistachios.
