Mini Tea Cake Recipe Today I am sharing a tea time snack recipe which is a cake recipe. They are really delicious, spongy and soft. The process of making these cakes is also easy as you do not need much ingredients for this. They goes perfect with the evening tea as well. So if you want to make something delicious for the evening snack, let’s know how to make it.
Necessary Ingredients Required For Mini Tea Cake
- All purpose flour/maida = 250 gm
- Powdered sugar = 250 gm
- Eggs = 6
- Soft butter = 1/2 cup
- Pistachios = 1 tbsp, finely chopped
- Almonds = 1 tbsp, finely chopped
- Baking powder = 1 tsp
- Lemon juice = 1 tbsp
- Vanilla essence = 1 tsp
Instructions For Making It
Firstly in a mixing bowl, sieve fine flour and baking powder. Mix well and keep aside.
Then in other bowl, add powdered sugar and soft butter. Whisk or beat well till it turns into a smooth and creamy mixture.
Further add eggs in it and mix well. Add eggs one by one and mix well till it becomes a smooth mixture.
Now add vanilla essence, oil and lemon juice in the egg mixture and beat it again till everything gets evenly combined.
Furthermore, gradually add all purpose flour in the mixture and fold it gently. Do not beat it otherwise batter will not turn fluffy.
Once you are done by making cake batter. Keep it aside.
Now grease mini cake moulds with butter or oil and then pour them to the moulds. Make sure you do not have to pour them full otherwise they will not turn out fluffy and puffy. Just pour till half of the mould as shown in the picture.
Now add some chopped almonds and pistachios on the top.
Preheat the oven at 180 degree celsius for 30 minutes.
Add the mould to the oven and bake them at 180 degree celsius for 20 minutes.
Finally, your delicious mini tea cake are now ready. Cut them and serve them once they cool and enjoy.
