Matar Kachori Recipe Hey guys!! Welcome back to our site. Today I am going to make a very crispy yet tasty kachori recipe. This is a pea stuffed kachori which is really good in taste and easy to make. The stuffing of peas is prepared for this kachori and then fill it the dough and then deep fried them. Let’s know how to make it.

Necessary Ingredients Required For Matar Kachori

For Ground Spices

  • Coriander seeds = 2 tbsp
  • Fennel seeds = 1 tbsp
  • Cumin seeds = 1 tbsp

For Stuffing

  • Peas = 2 cups
  • Fennel seeds = 1 tsp
  • Black pepper powder = 1 tsp
  • Ginger = 1 tbsp, finely chopped
  • Green chilies = 3, finely chopped
  • Asafoetida = 1/4 tsp
  • Salt = as per taste
  • Red chili powder = 1/2 tsp
  • Sugar = 2 tsp
  • Oil = 1 tbsp

For Dough

  • Fine flour = 2.5 cups
  • Salt = as per taste
  • Ghee or clarified butter = 5 tbsp
  • Water = as required for kneading the dough

Making of Ground Spice Powder

Step 1

Take a pan, heat it up. Then add coriander seeds, fennel seeds and cumin seeds in it.

Step 2

Roast them till a aroma comes out and then turn the flame off.

Step 3

Now after cooling it, add it into the mortar pestle and crush it to make a powder from it.

Instructions For Making Matar Kachori Stuffing

Step 1

Take a pan, add oil in it and heat it up.

Step 2

Ones the oil gets heated, add fennel seeds in it and then add peas in it. Saute them for 2 minutes.

Step 3

Now add chopped green chilies, salt, red chili powder, sugar, asafoetida, ginger, black pepper powder. Mix them well with peas and then add enough water so that peas gets soft well.

Step 4

Cook it for 8 to 10 minutes or till the peas gets soft.

Step 5

Ones the peas becomes soft, add the prepared ground masala in it and mix it well.

Step 6

With the help of  ladle, mash the cooked peas and then keep it aside for cooling.

Method Of Kneading The Dough

Step 1

Take a mixing bowl, add fine flour in it then add salt and ghee in it. Mix it well till the ghee completely mixed in it.

Step 2

Now gradually add water and knead a dough from the flour. Dough must be smooth. Neither too stiff nor hard.

Making Of Kachori

Step 1

Take a small portion from the dough, grease your palms with oil, roll the dough and make a ball from it.

Step 2

Flatten it by pressing it with fingers and then add stuffing in it as required.

Step 3

Close it by pleating it or by keeping all the sides in the corner.

Step 4

Now again make a ball from it. Then gently roll it by using rolling pin and make a kachori size from it.

Step 5

Take a wok, add oil in it and heat it up, after heating of oil, add kachori in it and fry it on a medium to low flame till the kachori turns golden brown in color and flip it in between to fry it from all the sides.

Step 6

Shake off the excess oil and then transfer it to a serving plate.

Your matar kachori is now done. Enjoy it hot with green chutney.
