Lemon Rice Recipe This is a delicious sour and spicy rice recipe which is amazing in taste and flavor. It is really a quick and easy recipe for the lunch and you can also pack it in lunch boxes. It is mainly prepared in South India and popularly known as chitranna. This is made with cooked rice by adding some basic ingredients and tempering to it. So let’s know how to make it.
Necessary Ingredients Required For Lemon Rice
- Rice = 1 cup, soaked
- Peanuts = 1 tbsp
- Mustard seeds = 1/2 tsp
- Chana dal = 1 tsp
- Dry red chilies = 2, broken
- Urad dal = 1/2 tsp
- Cashews = 1 tbsp
- Ginger = 1 inch piece, finely chopped
- Asafoetida = a pinch
- Salt = as per taste
- Turmeric powder = 1/4 tsp
- Curry leaves = few
- Green chilies = 1, finely chopped
- Coriander/parsley/cilantro/ = 1 tbsp, finely chopped
- Lemon juice = 1 tbsp
- Oil = 1 tbsp
Instructions For Making It
Firstly in a pan add 2 cups of water and bring it to a boil, then add soaked water in it and cook them 80%. Keep the cooked rice aside. (you can also take cooked rice or leftover rice if you have).
Now in a wok, add oil and heat it up.
Further add peanuts in it and roast them. Also add cashews in it and roast them till they turn golden in color. Make sure they should not burn.
After roasting them, take them out from the wok and keep aside.
In the same oil, add mustard seeds, dry red chilies, urad dal, chana dal and let them splutter for a while.
Then add chopped ginger in it and saute for few seconds.
Furthermore, add green chili, curry leaves, turmeric powder, salt. Mix well.
Add cooked rice in it and gently mix with the tempering. Also add fried peanuts and cashews and mix well.
Then add chopped coriander and lemon juice in it. Make sure everything gets combine well and even.
Finally, your delicious lemon rice are now ready to serve. Serve them hot and enjoy.
