Kaju Moti Pulao Recipe Today I am going to share a rich, delicious and flavorful pulao recipe which is absolutely perfect to serve in front of guests or in parties as well. You had tried a lot of veg pulao but this one is incredibly delicious. Once you make this at your own, then you will going to forget all the other pulao. Let’s know how to make it.
Necessary Ingredients Required For Kaju Moti Pulao
- Basmati rice = 1.5 cup, soaked
- Cashews = 20, soaked
- Cinnamon stick = 2 stick
- Green cardamom = 3
- Cloves = 2
- Cumin seeds = 1 tsp
- Bay leaf = 1
- Salt = as per taste
- Green chili = 2, slit
- Green coriander = 2 tbsp, chopped
- Mint leaves = 1 tbsp, chopped
- Sugar = a pinch
- Fried onion = 1 tbsp
- Saffron milk = 1 tbsp
- Milk = 1/2 cup
- Ghee = 1 tbsp
Ingredients For Making Moti
- Cheese = 2 slices
- Tutti frutti = 1 tbsp
- Corn flour = 1 tbsp
- Green cardamom powder = 1 tsp
- Rice flour = 1 tbsp
- Mawa or khoa = 3 tbsp
- Salt = as per taste
- Oil = for frying
Instructions For Making Moti
Take a bowl and add cheese, corn flour, rice flour, green cardamom powder, salt and mixed all the ingredients well. Knead a dough from the mixture, add milk if required.
In a separate bowl, add mawa and tutti frutti. Mix both the ingredients well.
Now divide the dough into small parts and make a round ball from them. Then slightly flatten them and make a bowl shape of it. Now place the mixture of tutti frutti and mawa in it and again roll it to make a ball. Make ll the moti with the similar process.
Heat a pan with oil and then add these prepared moti in it. Fry them till they slightly turn golden in color. Do not over fry them. Your moti are now ready, keep them aside.
Instructions For Making Pulao
In a pan, add ghee and heat it up. Then add cloves, cinnamon stick, cumin seeds, bay leaf and green cardamom in it. Let the whole spices splutter for few seconds.
Further add cashews, green chili, coriander, mint leaves, sugar and ginger garlic paste in it. Saute all the ingredients for a while. Add half of fried onions in it and mix well.
Later add soaked basmati rice and salt in it with 3 cups of water and bring it to a boil. Once a boil comes in it, cover the lid and cook it on a high flame for 8 to 10 minutes.
Furthermore, after the mentioned time, add reserved onion, milk and saffron milk in it. Cover the lid and let it cook for 5 minutes more or till water becomes evaporated.
Finally, take them out to the serving plate and garnish it with moti and some fried onions. Serve it hot with chutney and raita and enjoy.
