Kaju Katli Recipe It is one of the most popular most famous and apart from all, the tastiest Indian sweet. Also known as kaju barfi. Kaju means cashew and it is prepared by grinding cashews and then added this powder into saffron and sugar solution. This is one of my favorite sweet which I have been eating the most. Today I am going to share its recipe so that you can make it easily at home. The process is not so tough and you can make it easily. The taste of homemade kaju katli is just at the another level. This Diwali make kaju katli at home and enjoy with your friends and family Let’s know how to make it.
Necessary Ingredients Required For Kaju Katli
- Cashews = 1 cup
- Sugar = 3/4 cup
- Water = 1/2 cup
- Cardamom powder = 1/2 tsp
- Ghee = 1 tsp
- Saffron = 3 to 4 threads
- Rose water = 1 tsp
How To Make It At Home
Take a blender jar, add cashews in it and grind it into a fine powder.
Remember that you don’t have to grind it continuously otherwise blender get heated and cashews start releasing oil. So grind it within 5 seconds.
After grinding cashews, sieve them to get lump-free powder.
Now take a pan, add water in it and also add sugar. Put it on a flame and let the sugar melt.
After melting of sugar, add cardamom powder, saffron threads and rose water and continue to cook it.
Now after 8 to 10 minutes, add cashew powder and mix it well.
Also add ghee and let it become in a paste like consistency and continue to cook on a low flame.
Let it cook for some more time and cook it till it starts separating pan.
Turn the flame off and let cool for few moments.
Take a mould, grease some ghee on it.
After cooling of kaju mixture, knead it gently and then spread it evenly on a mould.
Let it cool down completely and cut it into diamond shapes.
Your kaju katli is ready. Serve them and enjoy.
