Curry Leaves Rice Recipe This is a quick and easy lunch box recipe which you can made with the basic ingredients and a handful of curry leaves. It does not need any side dish as it only goes well with the raita. This is a quick and a healthy recipe too. The flavor and aroma of curry leaves works wonder with rice. So let’s know how to make it.

Necessary Ingredients Required For Curry Leaves Rice

  • Cooked rice – 2 cups
  • Asafoetida (hing) = a pinch
  • Curry leaves = 5 to 6
  • Peanuts = 1 tbsp
  • Salt = as per taste
  • Mustard seeds = 1 tsp
  • Oil = 3 tsp

For Masala Paste

  • Urad dal = 1 tbsp
  • Chana dal = 1 tbsp
  • Coriander seeds = 1/2 tsp
  • Cumin seeds = 1/2 tsp
  • Dried coconut slices = 2 tbsp
  • Curry leaves = 1/2 cup
  • Oil = 2 tsp

Instructions For Making It

Step 1

Firstly, take a pan, add oil in it and heat it up. Now add urad dal and chana dal in it and let them splutter for few seconds.

Step 2

Then add coriander seeds, cumin seeds and saute till they slightly turn golden in color.

Step 3

Add coconut slices and saute for a while. Further add curry leaves and saute for about a minute or till curry leaves turns crispy.

Step 4

Turn the flame off and keep aside for cooling.

Once it cools completely, transfer it to a blender and and blend it to make a smooth powder from it. Do not add water in it.

Step 6

In a wok, add oil and heat it up.

Step 7

Furthermore, add mustard seeds, a pinch of asafoetida and few curry leaves and let them splutter for a minute.

Step 8

Also add peanuts in it and splutter them completely.

Step 9

Now add cooked rice in it and mix well with the tempering.

Step 10

Finally, add prepared masala paste in it and also add salt, mix well to combine everything well and even. Cook for 2 to 3 minutes by adding 2 tbsp of water and cover the lid, cook on simmer till flavors absorbed by rice.

Here your delicious curry leaves rice are now ready to serve. serve them hot with coconut chutney or raita and enjoy.
