Corn Soup recipe This soup is really healthy and creamy, which is made with sweet corn and veggies like carrot, beans, spring onions. I refer it as a great party appetizer and it can also be served before meal. Necessary Ingredients Required For Corn Soup

  • Corn = 1 cup
  • Water = 4 tbsp
  • Garlic = 4 to 5 cloves, finely chopped
  • Ginger = 2 inch piece, finely chopped or grated
  • Sweet corn = 1/2 cup
  • Carrot = 1/2 cup, finely chopped
  • Onion = 1, small size, finely chopped
  • Spring onions = 1/2 cup, chopped
  • Water 5 to 6 cups
  • Salt = as per taste
  • Black pepper powder = 1/2 tsp
  • Vinegar = 1/2 tbsp
  • Oil = 2 tbsp

For Slurry

  • Corn flour = 2 tbsp
  • Water = 1/2 cup

Instructions For Making It

Step 1

Take a pan, add oil in it and heat in up.

Step 2

After heating of oil, add chopped onion in it and saute for 2 minutes. Then add chopped ginger and garlic and saute it also for 2 minutes.

Step 3

Now add sweet corn and carrots in it. Saute for 2 to 3 minutes or until vegetables get slightly cooked.

Step 4

Take a blender, add 1 cup sweet corn in it and add water. Blend it to make a paste.

Step 5

Now add this paste in vegetables and saute for 2 minutes.

Step 6

Further add 5 to 6 cups of water, add salt and stir it well. Cover the lid and let it boil for 15 to 20 minutes.

Step 7

Prepare the slurry by mixing corn flour and water. Mix it well and make it lumps free.

Step 8

Add this slurry in soup and stir continuously.  Continue to stir and let it cook till soup gets thicken.

Step 9

Ones soup gets thickens, add black pepper powder, vinegar and spring onion greens. Stir it well.

Your sweet corn soup is ready. Serve it hot.
