Coconut Bafi Recipe If you are craving to eat something sweet and delicious, then this coconut barfi is perfect for you, Here I am sharing a quick easy and delicious recipe of pink coconut barfi which is really soft, melt in mouth. This is made with desiccated coconut, sugar, condensed milk and some coconut milk. There are a lot of variants for making this barfi and this is one of my favorite way to make it. Basically these sweets are made during festivals, but who waits till festivals, so make this coconut barfi right now.

Necessary Ingredients Required For Coconut Barfi Recipe

  • Desiccated coconut = 150 gm
  • Coconut milk = 250 ml
  • Milk = 1/2 cup
  • Condensed milk = 1 tin
  • Sugar = 3/4 cup or as per taste
  • Rose essence = 1 tsp
  • Pink food color = few drops
  • Green cardamom powder = 3/4 tsp
  • Pistachios = for garnishing

Instructions For Making It

Step 1

Firstly in a pan, add coconut milk, milk and desiccated coconut in it. Mix well and cook it till the mixture turns thick. Once it slightly turns thick, add sugar and cook the mixture until sugar completely dissolves in it.

Step 2

Continue to stir the mixture till it turns into a thick consistency and water present in it will evaporate.

Step 3

Now add condensed milk in the coconut mixture and mix well. Again cook it till everything gets mixed even.

Step 4

Then add few drops of pink food color, green cardamom powder, rose essence. Cook till the mixture turns sticky, shiny, even and thick like a barfi mixture. This process will take 20 to 15 minutes. Make sure continuously stir it so that it will not burn.

Step 5

Once it becomes even, turn the flame off and keep it aside.

Step 6

Take a mould or tin, grease it with ghee or butter then place a butter paper on it.

Step 7

Pour the prepared mixture to the tin and spread it evenly. Tap it and add some chopped pistachios.

Step 8

Keep it aside for cooling or set for about 2 to 3 hours.

Finally, your delicious coconut barfi is now ready. Serve it after meal and enjoy.
