Chicken Maharani Recipe | Mughlai Chicken Maharani Recipe

Chicken Maharani recipe is a royal dish which is spicy yet a rich textured gravy. It is made up of cashews paste, green chili paste and many other flavorful ingredients. The gravy of this chicken maharani recipe does not contain onion or tomatoes. The taste of this dish is just lip smacking and amazing. Let’s know how to make it.

Necessary Ingredients Required For Chicken Maharani

  • Chicken = 1 kg, with bones
  • Fresh Cream = 3 tbsp
  • Milk = 1 cup
  • Coriander seeds = 2 tbsp, roasted and crushed
  • Salt = as per taste
  • Mace powder or javitri = 1/2 tsp
  • Cumin seeds = 1 tsp, roasted and crushed
  • Garam masala powder = 1 tsp
  • Chili flakes = 2 tsp
  • Fennel seeds = 1 tsp
  • Green cardamom = 4 to 5
  • Ginger and garlic paste = 3 tbsp
  • Green chili paste = 2 tsp
  • Cashews  = 3 tbsp, paste
  • Green coriander = 1 tbsp, finely chopped
  • Curd = 250 gm, at room temperature
  • Oil = as needed

How To Make It

Step 1

Take a bowl, add curd in it and add green chili paste, ginger and garlic paste and cashew paste. Mix all pastes with curd.

Step 2

Now take a deep pan, pour oil in it and heat it up.

Step 3

After heating up of oil, add curd mixture in it and continuously stir it and cook it on a high flame.

Step 4

Now add washed chicken in a pan. Cook chicken on a high flame for 5 minutes.

Step 5

Now add milk and stir well with a spoon and mix well. Keep the gas sharp, when it comes to a boil, then reduce the gas to medium.

Now add fennel seeds, green cardamom, red chili flakes, crushed cumin, mace powder, crushed coriander seeds, salt and garam masala powder.

Step 6

Now mix all the spices with chicken and cook it on a high flame until a boil comes to it.

Step 7

After a boil, cover the lid of a pan and turn the flame on low to medium.

Step 8

Cook chicken until oil starts separating or until it becomes tender.

Step 9

Ones chicken become tender, open the lid and give it a stir. If there is a presence of water then cook it until liquid gets evaporated.

Step 10

Now turn the flame off and add fresh cream and chopped coriander.

Your chicken maharani is ready.

Sere it hot with naan or butter naan or paratha.
