Brinjal Curry Recipe | Andhra Style Brinjal Curry | Baingan Curry

Brinjal Curry Recipe Brinjal is one of the most consumed vegetable all over the world. Many alternatives methods are given to make it but today I am going to make in Andhra style. The curry of brinjal which is also called egg plant is very tasty and easy to make. Whether it”s your lunch time or dinner time, you can make it easily as this is such a quick recipe which I am sharing. Let’s know how to make it.

Necessary Ingredients Required For Brinjal Curry

  • Brinjal or eggplant or baingan = 500 gm, small size, fried
  • Mustard seeds = 1 tsp
  • Fenugreek seeds or methi = 1/4 tsp
  • Onion = 1, finely chopped
  • Onion = 1, sliced
  • Tomato = 1, chopped
  • Ginger and garlic paste = 1 tbsp
  • Cumin seeds = 1 tsp
  • Split chickpea or chana dal = 1 tsp
  • Urad dal = 1/2 tsp
  • Fennel seeds = 1/2 tsp
  • Dry red chilies = 3
  • Coconut = 2 tbsp
  • Salt = as per taste
  • Red chili powder = 1 tsp
  • Coriander powder = 1 tsp
  • Turmeric powder = 1/2 tsp
  • Tamarind pulp = 2 tsp
  • Curry leaves = 2 to 3
  • Coriander = 2 tbsp, finely chopped
  • Oil = 4 tbsp

Instructions For Making It

Step 1

Take a pan, add 1 tbsp oil in it and heat it up.

Step 2

Add sliced onions, tomatoes, dry red chilies, fennel seeds, urad dal, chana dal and coconut and saute them for few moments.

Step 3

Now after cooling it, add it into a blender jar and by adding little amount of water, make a fine paste from it.

Step 4

Now in a pan, add oil and then add mustard seeds, fenugreek seeds and cumin seeds. Let the seeds splutter for few seconds.

Step 5

Add chopped onion and saute for 2 minutes.

Step 6

Then add prepared paste and mix it well. Cook it for 5 to 7 minutes.

Step 7

Add tamarind pulp, red chili powder, coriander powder, turmeric powder in paste and cook it well.

Step 8

Add salt and mix well. Also add fried brinjal and mix it with masala and then add water as per your required consistency and cover the lid for 5 to 8 minutes and cook it.

Step 9

Finally, add chopped coriander and serve it.

Serve it hot with roti, rice or paratha.
