Blueberry Muffins Recipe These muffins are soft spongy and sweet in taste. They are really delicious in taste and a quick and easy recipe also. You can also store these muffins for 3 days or can also store them in refrigerator for about 6 to 7 weeks as well. Here I am not bursting or mashing blueberries as I like to keep them as it is, but if you want then you can mash them as well. Let’s know how to make them at home.
Necessary Ingredients Required For Blueberry Muffins
- All purpose flour/fine flour/maid = 2 cups
- Blueberries = 1+1/2 cup
- Salt = 1/2 tsp
- Sugar = 3/4 cup
- Oil = 5 tbsp
- Eggs = 2
- Vanilla extract = 2 tsp
- Baking powder = 2 tsp
- Melted butter = 3 tbsp
- Buttermilk = 1/2 cup
Instructions For Making It
If you don’t have buttermilk, then take milk and add a teaspoon of lemon or vinegar and stir it. Keep it aside and use it after 20 to 25 minutes.
Now pre heat your oven at 200 degree celsius or 400 degree f.
Take a mixing bowl, add sieved fine flour, baking powder and salt. Whisk all the ingredients well.
Further add the washed and drained blueberries in flour and mix well. Keep this mixture aside.
Take a separate bowl add oil, butter, egg, sugar and vanilla extract, whisk this mixture well till all the ingredients gets combine and color turns pale.
After mixing these ingredients, add this mixture and buttermilk to the flour mixture. Make sure that you should not over mix it. Just slightly mix in the folding consistency with gentle hands.
In muffin tin, line it with muffin liners and then pour the prepared batter to the tin. Full them to the top completely and sprinkle some sugar on the top.
Bake them in the oven for 20 minutes and check them by pricking toothpick in it, if it comes clean then muffins are perfectly baked.
Your delicious blueberry muffins are now ready. Serve them and enjoy.
