Aloo Baingan Recipe | Potato Brinjal or Eggplant curry Recipe

Aloo baingan or potato eggplant curry is a delicious recipe. Today I am making aloo baingan curry, which is really a mouth watering recipe. This aloo baaingan recipe is my mother’s recipe which she mde at home and we all loved it. This spicy, tasty and delicious recipe is just amazing. Truly say, I like this recipe more than the baigan bharta. Make this recipe and trust me you will just love this. I am using sour tomatoes in it which makes its taste just amazing.

Necessary Ingredients Required For Aloo baingan

  • Egg palnt or brinjal = 500 gm
  • Potato = 250 gm
  • Tomato = 2, finely chopped
  • Green chilies = 2, slit (optional)
  • Salt = as per taste
  • Onion = 2, medium size, paste
  • Ginger and garlic paste = 1 tbsp
  • Coriander powder = 2 tsp
  • Red chili powder = 1 tsp
  • Turmeric powder = 1/2 tsp
  • Yellow fenugreek seeds or methi dana = 1/4 tsp
  • Kalonji = 1/4 tsp
  • Oil = 2 tbsp

Method Of Making In Easy Steps

Step 1

Wash Brinjal and then chop into long pieces.

Step 2

Peel off the potatoes, wash them and chop them.

Step 3

Now take a pan, pour oil in it and then add methi and kalonji. Let them crackle for few seconds.

Step 4

Now add ginger and garlic paste, saute it for few seconds and then add onion paste in it.

Step 5

Cook it for 2 to 3 minutes.

Step 6

Now add salt, turmeric powder, coriander powder, red chili powder. Stir it continuously for 2 minutes.

Step 7

Add chopped tomatoes and continuously stir it, now turn the flame low and cook until tomatoes gets soft.

Step 8

Now in spices, add chopped egg plant and potatoes and slit green chilies, mix them well with spices and then add 1 tbsp of water and cover the lid of a pan.

Step 9

Cook them on a low flame for about 10 to 12 minutes or until potatoes gets soft.

Step 10

After the mentioned time, open the lid and check whether potato gets soft or not.

Step 11

Give it a stir and then turn the flame off.

Serve this aloo baingan and garnish it with chopped coriander. Serve this with roti or rice as well.
