Agra Petha Recipe Welcome back guys!!! Today I am here with the new and amazing sweet recipe which is really really delicious and popular in India, mostly in Agra. Petha is basically a translucent soft candy which is made with ash ground (winter melon). So today I am making kesar petha, the process of making this petha is quite easy and you can easily store it for about a month in a refrigerator. So let’s know how to make it.

Necessary Ingredients Required For Agra Petha

  • Winter melon/White Pumpkin/Ash gourd = 800 gm
  • Sugar = 2 cups
  • Lime stone (chuna) = 3/4 tsp
  • Rose water = 2 tsp
  • Green cardamom = 5 to 6 pods
  • Saffron = few strands
  • Saffron food color = a pinch
  • Water = 1/2 cup

Instructions For Making It

Step 1

Firstly for making it, take ash gourd, slice it into cubes and then remove the skin and seeds completely.

Step 2

With the help of fork, prick in cubes well.

Step 3

In a large bowl, add water and then add lime stone in it. Mix lime stone till it completely dissolves into it.

Step 4

Now add all the ash gourd cubes into the lime stone water and let them soak into it for the whole day i.e. 24 hours. Make sure that you stir it well in every three hours.

Step 5

After one day, rinse and wash all the cubes in normal water for 5 to 8 minutes so that all the limestone water removes from it.

Step 6

Put a sauce pan, add 5 to 6 cups of water to it and add all the cubes of ash gourd to it. Boil these cubes for 15 to 20 minutes and stir it occasionally. Drain all the water and keep these cubes aside.

Step 7

In a sauce pan, add sugar and 1/2 cup of water. Put it on a flame and stir it well till sugar melts completely. Also add cardamom pods and saffron threads. Mix well all the things.

Step 8

Further add food color to it to give it a nice color and mix it well. Ones sugar melts completely into it, add the cubes of ash gourd into it.

Step 9

Mix well with the sugar syrup and bring it to a boil, ones boil appears to it, turn the flame medium and let it cook till it absorbs all the sugar syrup and sugar syrups turns thick.

Step 10

Once ash gourd absorbs sugar syrup well, add rose water and give it a stir.

Step 11

Now transfer them to a serving plate or to a wire mesh.

Finally, your agra petha is now done. Serve it after cooling and enjoy.

You can also store it into a refrigerator for a month and enjoy whenever you want to.
